Bio

Ashwini Wagle, Ed.D, MS, RD, FAND is a Professor and Chair of the Department of Nutrition, Food Science, and Packaging at San Jose State University (SJSU). She earned her doctoral degree in Educational Leadership (Ed.D) from the University of New England and brings over a decade of experience as a registered dietitian (RD) in skilled nursing facilities and acute care hospitals across the San Francisco Bay Area.

Ashwini Wagle is actively engaged in both on-campus and community organizations. She serves on committees for the South Asian Heart Center (SAHC) at El Camino Hospital, the Center for Healthy Aging in Multicultural Populations (CHAMP), Rise Against Hunger, and the Education Council of the California Academy of Nutrition and Dietetics. Her research focuses on the intersection of food, culture, and health, with an emphasis on traditional health beliefs, practices, and nutritional behaviors of multicultural populations, particularly South Asians. Additional research interests include food insecurity, hunger, and foodservice systems. She has published extensively in peer-reviewed scientific journals and presented over 60 abstracts at national, state, and local conferences. Notably, she is the author of Carbohydrate Counting: Traditional South Asian Food Lists: For Management and Prevention of Diabetes Mellitus, a widely recognized nutrition education tool used in healthcare settings across the U.S., U.K., Canada, Australia, and Hong Kong.

In recognition of her contributions, Ashwini Wagle has been recognized as the Fellow of the Academy of Nutrition and Dietetics, a prestigious recognition of her service to the profession. She was also awarded the "Excellence in Education" award by the California Academy of Nutrition and Dietetics for 2016–2017. A dedicated educator, Ashwini Wagle has spent 21 years at SJSU, driven by her commitment to the university’s mission and her passion for teaching.

Beyond her professional life, Ashwini Wagle is an enthusiastic cook, hiker, and runner. She has participated in over 100 races, including half-marathons, triathlons, and relays, and she plans to continue exploring hiking trails around the world.
